Pork and Corn Tortilla Bake - gluten free

This is a great use of some leftover pork BBQ.   Amounts of each item really does not matter, its personal preference as to how much of each item you like.  These amounts are just approximate.

3 Gluten free tortillas - 1 cut into strips
1 1/2cups Corn, frozen or can
3/4 cups Greek yogurt
2 cups Pork BBQ or whatever you have
1/4 cup Salsas verde
4oz Pepper jack cheese

Layer 2 of the tortillas on the bottom of the pan.
Top with pork and corn
Mix the Greek yogurt and salsa to make a smooth sauce.
Pour yogurt sauce over top
Top with tortilla strips and shredded pepper jack cheese

Bake at 350 until heated and bubbly - about 25 minutes
